I thought that they would have both Grey hunters and Blood Claws.

Imperial Fists have Chaplains too with Crozius. But Actually, we have juste a basic Apothecaries.
  3. Chaplains and Apothecaries, there are two different classes.
    Wolf priests unite them

Except Space Wolves don't have apothecaries, they have Wolf Priest's who do both the apothecaries and the chaplains job.

Still think they're using more of their time to get the Orks and Eldar in and go from there, Twinkie marines were easy to put in compared to the Wolves.

Can't believe I didn't catch this the first time! Their Apothecaries serve as Apothecaries, they only overlap with their Chaplains as a moral thing with the Blood Chalice, otherwise they're just like all the others. They aren't multi-role and very different like the Wolf Priests.

I misspoke when I said they are the same. You're right they aren't exactly identical since the Wolf Priest is both Apothecary and Chaplain whereas the Sanguinary Priest is a Apothecary first with a quasi Chaplain roll. However it's that quasi Chaplain roll that set them apart from Apothecaries from other Chapters. Sanguinary Priests inspire battle brothers and also give sermons.

    from the wiki:
Some of them go into battle with a much more ceremonial look which sets them apart from other Apothecaries and is not currently represented in EC.

    Edit:
I do believe that like the Wolf Priest the Sanguinary Priests can be taken as an HQ. I think a standard Space Marine Chapter takes an apothecary as an Elite but I don't have the current SM codex to check.

But the point is, disregarding the visual bit since all of the Chapters/etc don't have much in the way of unique looks yet until down the road, that they're still pretty basic Apothecaries. They don't fully combine TWO classes (one of which isn't a base class,) and since Chaplains still exist in the Blood Angels, they're more like intermediaries for their spirituality/etc. This is not to degrade them in any way, I like the Blood Angels, but putting their Apoths in was simple compared to Wolf Priests that are fundamentally different in addition to not even using the same equipment which is in game right now.

Still think it's really mostly just because they holding it for a bigger update when/after the other races hit or are working on other things atm. Which I think it's good, getting the other races or other functions into the game to test right now I'd say is a bit higher priority.
