Offal you say? As long as it isn't intestine. I have been thinking about buying some animal hearts (Preferably around the same size as a human heart) and try them out, see how they taste.
And about blue steak, I have a few words. No pan required. From the pack to the mouth. (With some spices)

you have to cook offal (heart, kidney, liver).
you can get really nasty parasites if you don't

you have to cook them with a sauce. otherwise they dry out and go rubbery.
