The Greek, Near-East, and early Judaic Christian portrayals of Serpentine Dragons probably have more to do with various Cults of Snakes that existed throughout the region. As for a link between Monitor Lizards and European Dragons, there's a small problem with that idea. Dragons in western Mythology predate Knights. You must remember that during the 6th Century AD the Celtics embraced the Red Dragon as a symbol, whilst the Anglo-Saxons were represented by a white dragon. Nor does it explain how you can have Germanic Dragons with just a pair of wings and a pair of legs, as opposed to the more "Classic" quadruped with wings. Then there's how Monitor Lizards have legs like Crocodilians, out to the side, whilst most portrayals of Dragons have their legs beneath them like birds or felines and canines. In fact it is more probable that Dragons were influenced by Crocodiles than Monitor Lizards, as Crusading Knights were more likely to see Crocodiles as they exist in the Middle East (Nile Crocodiles for example). And yet even the influence of Crocodiles on European Dragons seems suspect. It is more likely that the Classic European Dragon is an amalgam of creatures, like the forms of Chimera, Manticore and the Chinese Dragon (which has the face of a camel or crocodile, eyes of a demon or rabbit, antlers of a deer, cow's or camel's ears, neck of a snake, hawk's claws, palm of a tiger, and scales of a carp).
