Because Orkz are simple minded, if someone tells them there's a whole load of loot on top of a hill, they'll climb the hill. If someone tells them there's gold at the bottom of the well, they'll dive into the well. Furthermore, it's just too easy to trick the Orkz, if an Eldar shows up on a battlefield, near an Ork Waaagh, and the Orkz see the Eldar, they'll chase them and the Eldar would simply lead them towards the Eldar's enemies, for example the imperial guard. And since the orkz are simple minded, they'll just kill the imperial guard, even though the Eldar could be long gone. The Chaos Gods will grant you more power then you could ever know in your lifetime, if you aid us.
Remember that the Orkz love fighting. They're not really being used as pawns if they get what they want out of every situation, and what they want is to beat the crap out of the other races and each other. So if the Eldar lead a band Orkz to an IG outpost, of course the Orkz will assault the outpost, because that's where the fighting is.
If any Orks want a greater share if glory, to know where the best battles will be before they even start, and maybe someone blocking the retreat of some marines so they don't get away...
