I'd much rather see the Black Templars or Salmanders as the 5th, But the Imp Fists are a good choice. I'd be proud to serve along side if it came to it. At present I am not in a faction, and I do love my flame weaps (Sally's) but love fighting as a devastator with my HB.

In the lore they are known to be stubborn on the battlefield and a crusader chapter. Visuali, some people like to model this yellow guys with old marks of power armor, damage, and normally without much ornaments, to simulate that they are always in a crusade. But the real difference lays on their speciality in siege warfare. In the Tabletop they can use bolt weapons better than anyone, and some of their units are tank hunters. Also, in the last Lore that I read, Sentinels of Terra, the chapter deploy a considerable amount of Centurions Warsuits (GW want to sell those baby's). And they hate the Iron Warriors, a lot, making a whole crusade to purge a number of their fortress near the Eye of Terror, and the Iron Warriors also hate the Fists.
Yes, they do get different traits and combat doctrine, actually. Or perhaps, extra traits and combat doctrines would be a more appropriate term. They are superior to the Ultramarines (and pretty much anyone else, for that matter) when it comes to accuracy with bolt weapons, and their Devastator Marines have significant bonuses vs armoured targets (vehicles/buildings). The company-sized Crusade of Thunder fielded more Centurion Warsuits than can the entire Ultramarines Chapter.
