I don't mind seeing a little blood from a slice from a melee or a burst from a heavy bolter round. Though I think things like dismemberment and bodily explosions are unnecessary, imo.
From a technical point the amount of memory required for all the bodies flying in the air would be to much for the game to handle, especially if they're going for one server.
Another point is, this is meant to be a video game, and personally I'd rather not make it TO real.

Too much gore in a 40K game with gods that are devoted to sex and pleasure, while another is devoted to blood and skulls? Nah, Space Marine got it right. Animated dismemberment, but no real physics to the executions would allow for less calculation
