Even if a guardsman tried to follow this technique, they wouldn't be fast enough to do so, have the muscle memory, not wet their pants in fear and freeze when they see an ork charging down upon them, and there are innumberable ways that they can simply get a small part of the technique wrong that would screw them over. They might miss the grab on the ork's wrist, they may not twist it properly, etcetera.

Knives are at a severe disadvantage against any other larger weapon at distances greater than grappling, where the ork has obvious advantages. I would bet my money on an Ork every time

This would actually be a really funny part of a good IG story. Follow a gaurdsman who has only ever been shown propaganda like this and see his reaction when the first ork he encounters is a Goff Nob in full berserker fury.
